Ocean Trout Tartare with Anchovies and Salmon Roe

Ingredients

Juniper berries50 gm
Anchovies (chopped)1 tsp
Virgin olive oil6 pcs
Brunoises red radish2 tbsp

Method

Mix the salt, ground juniper berries & sugar together, sprinkle over both sides of ocean trout, set aside for 1 hour. Wash the trout after curing and chop finely. Mix well with chopped anchovies, brunoises red
radish & virgin olive oil.

Arrangement: Insert tartare into the cones & garnish with salmon caviar and cresses.
